His doctoral work at the University of California – Davis became the Glycopedia – a decade spent rigorously mapping the molecular structures of our food to understand how it speaks to biology.
He asked the questions the field wasn’t asking: What if fiber wasn’t just one thing and what would we learn if we could see exactly what they did?
